Pinot Noir

Terroir: Situated on the west of the plateau overlooking the Cotes de Nuites, the Hautes-Cotes is planted on well exposed slopes over 19 communes in the Cote d’Or departement at an elevation of between 300 and 400 meters. The vines grow in grow in gravelly clay-limestone soils with an south-eastern exposure and come from two parcels. The wine is named after the priory-topped hill that dominates the latter parcel, Villers-La-Faye.

Vinification: After hand-harvesting most of the grapes are de-stemmed. Alcoholic formation takes place in large open re-used wooden vats. There is no heating of the must nor addition of enzymes – the aromas, tannins and colours are all natural, a true reflection of the terroirs and the grapes. Fermentation takes about 23 days and the wines are subsequently aged for 12 to 15 months before bottling.
